We are always on the hunt for a quick and easy travel snack to take on the road (and pop in the lunch box).  Snacks that are delicious and yummy…and also nutritious and not filled with yucky stuff that is bad for us.  If you have followed along for a while, you will know that earlier this year we watched That Sugar Film and it changed the whole way we look at food… For the better!

We have a few staples in our house – our Apricot Bites and Rainbow Balls are always a winner and always in our fridge for when we hit the road and in the lunch boxes. We keep trying and testing recipes and experimenting with wholefoods until we hit the jackpot! Today we hit the jackpot again and our girls made Choc Puff Bites.

Last week we made Wholefood Simply Not quite LCM bars and the were very good, so we played around with this idea and made a few changes and Choc Puff Bites were born.  I always thought that making healthy things would be so time consuming and require ingredients that I would have to search high and low for. Geez, I was so wrong. Quicker than any cake I have made, less ingredients and the kids LOVE them.

You will need:

  • 5 Tbs of natural peanut butter (if your school is No Nuts, simply use Tahini)
  • 4 tbs of honey
  • 1 tbs of Cacao
  • 1/2 tsp of Vanilla extract
  • 3/4 cup of coconut
  • 2 cups of puffed rice (you can also smash up corn thins)

Mix the peanut butter, honey, cacao and vanilla in a bowl

Add the coconut and puffed rice – this is so much fun and very sticky and messy.

Press into a pan lined with baking paper

Refrigerate – you can even freeze this one, we pack it frozen in the lunch box for school and by snack time the Choc Puff Bites are PERFECT!

Cut to size – we make them as bite sized pieces – you could make them as bars too, or in patty pans.
